Tasty Kerala Style Egg Roast Recipe – Egg Curry

Ingredients

  • Egg – 6 nos
  • Onion – 3 or 4 nos
  • Green chilli – 3 to 4 nos
  • Ginger – 1 nos
  • Garlic -8 to 9 nos
  • Curry leaves – 2 to 3 sprigs.
  • Tomatoes – 1 nos
  • Red chilli powder -1 tbsp
  • Coriander powder – 1 tbsp
  • Red chilli powder – 1 1/2 tbsp
  • Garam masala – 1 tbsp
  • Pepper seed – 1 tbsp
  • Mustard seed – 1 tbsp
  • Salt – 1 or 2 tsp
  • Oil – 3 to 4 tbsp

Method

  • In a pan, bring the water, salt and egg to a boil.
  • Drain boiled eggs and put in a bowl filled with cold water .
  • Then crush the pepper ,ginger and garlic ,set aside.
  • Deshell the boiled eggs and keep aside.
  • Heat oil in a pan,add mustard seeds and let them cracle.
  • Add dry red chilli and saute them well.
  • Then add crushed ginger ,garlic and pepper seed .
  • Saute them well for few minutes.
  • Then add curry leaves and green chilli ,saute them well.
  • Then add chopped onion and saute till onion become transluent
  • Sprinkle some salt and saute them well.
  • Then add turmeric powder ,red chilli powder, coriander powder and garam masala .
  • saute until the raw smell of the spices completely disappears.
  • Then add chopped tomatoes and saute them well.
  • Pour some water over them and thoroughly mix them .
  • Cover and cook them well.
  • Add boiled eggs and mix with masala .
  • Cook for 4 to 5 minutes.
  • Take the pan off the heat and set it aside.
  • Serve the tasty egg roast with appam.
