Elephant Foot Yam Fry Kerala style

Ingredients

  • Elephant foot – ½ kg
  • Curry leaves – 2 sprigs
  • Tamarind – small ball.
  • Turmeric powder – 1 tsp
  • Dry red chilli – 4 nos
  • Fenugreek seed – 1 tsp
  • Cumin seed – 1 tsp
  • Mustard seed – 1 tsp
  • Salt – 1 or 2 tsp
  • Oil – 3 or 4 tbsp

Method

  • Firstly we have to peel and cut the yam into small cubes .
  • Then wash and drain set aside.
  • Take a bowl add tamarind and water squeeze them well ,drain and set aside.
  • Take a pan add yam cubes ,tamarind water ,turmeric powder and salt cook them well .
  • Drained and set aside.
  • Heat oil in a pan add dry red chilli ,fenugreek seed and cumin seed fry them well and keep aside.
  • Then crush the fried ingredients like red chilli,cumin seed etc into fine powder and set aside.
  • Heat oil in a pan add mustard seed ,lets cracled.
  • Add curry leaves ,,cooked elephant foot yam and salt mix them well.
  • Then add crushed powder ,mix well and fry them well.
  • Remove from fire and set aside.
  • Serve and enjoy the healthy yam fry with meals
