- Mango -1 kg
- Shallots -9 or 10 nos
- Garlic – 5 or 6 nos
- Curry leaves -3 or 4 sprigs
- Grated coconut – 1 cup
- Fenugreek Powder – 1 tsp
- Dry red chilli -2 or 3 nos
- Cumin seed – 1 tsp
- Fenugreek seed -1 tsp
- Mustard seed – 1 tsp
- Salt – 1 or 2 tsp
- Oil -2 or 3 tbsp
- Firstly,we have to peel the outer skin of rip mangoes,then keep a side.
- Heat water in a pan add raw mangoes and boil them well .
- Grind cumin seed , dry red chilli, garlic, grated coconut and. Shallots into fine paste set aside.
- Then add the grinded coconut paste into raw mango curry pan and add some water ,combine them well.
- Add Fenugreek Powder and salt cook them well ,set a side.
- Heat small amount of oil in a pan add mustard seed and fenugreek ,let’s them cracked .
- Add dry red chilli, chopped shallots and curry leaves fry them well.
- Pour the mixture into the raw mango curry pan and mix them well.
- Serve the delicious kerala style rip mango
