Madhura seva / Sweet seva

Ingredients

Besan flour/Kadala Maavu – 1 cup.

Rice Flour – 1 Cup.

Salt as needed.

Coconut oil to fry.

Sugar – 1/2 cup.

Water – 1/4 cup.

Cardamom – 10 Nos.

Cumin powder -1 teaspoon.

How to prepare

*Combine rice powder, besan flour, and a pinch of salt. Add water little by little and make a soft dough. Consistency similar to chapathi dough.

*Heat a wok, and add oil. Keep the flame in medium-high.

*Grease the Sev Press or the Sev Sancha with oil and place the plate with many holes into the press.

*Fill in the dough into the press.

*Press out the dough into the hot oil. Fry it till it turns golden brown. Once cooked remove it from oil and keep aside.

*To make the sugar syrup, in a heavy bottom pan boil water, once boiled add sugar. Once the syrup comes to one string consistency add the Cardamom and cumin, turn off the flame. Pour the syrup to the fried seva and mix well. If you want the seva to be extra sweet add some powdered sugar.

Kerala style Madhura seva is ready.
