Tasty Beetroot & Dates Pickle – Kerala Style Beetroot Pickle

Ingredients

  • Dates – 20 to 21 nos
  • Beetroot – 1 nos
  • Carrots – 2 nos
  • Garlic – 7 to 8 nos
  • Green chilli – 2 nos
  • Ginger – 1 nos
  • Curry leaves – 2 to 3 sprigs
  • Mustard seed – 1 tsp
  • Salt – 1 or 2 tsp
  • Oil – 4 to 5 tbsp

Method

  • Today we have to prepare dates, beetroot and carrot mix pickle
  • Firstly, we have to cut the dates and remove the seeds.
  • Then put it into the water and set it aside
  • Heat oil in a pan,add mustard seeds and let them sputter.
  • Then add garlic, green chilies,ginger and curry leaves.
  • Saute them well for a few minutes.
  • Add red chilli powder and saute them well.
  • Then add the chopped beetroot and carrots
  • Saute them well for a few minutes.
  • Sprinkle some salt and mix them well.
  • Pour enough water over them to combine and cook them thoroughly.
  • Now, add a fine paste of ground dates.
  • Combine them thoroughly with the beetroot carrot cooking mixture.
  • Cook for few minutes
  • Remove from fire and set aside.
  • Serve and enjoy the tasty dates, beetroot, carrot mix pickles with meals.
