*Shallots (10 nos).
*Dried chilies as per spice.
*Salt to taste.
*Oil as required.
1) Heat oil in a pan. Add urad dal, once the color starts to change add grated coconut saute well. Add in the chopped ginger, garlic, shallots, chilies, and saute well. When the color change to red add the mint, coriander, and curry leaves and saute well. Add tamarind and salt to taste. Once the raw smell is gone keep the pan off the flame and let it cool completely.
2) Grind the above mixture well.
3) For seasoning over medium heat, place a pan, add oil, mustard seeds, dried chilies.
4) Allow mustard to get splutter and add this sizzling seasoning to the chutney. Gently mix and serve.
Urad dal chutney is ready.
