*Bitter gourd (thinly sliced) – 3 nos.
*Vinegar – 3 teaspoons.
*Salt to taste.
*Tamarind (infused water) – 4 tablespoons.
*Garlic – 2 cloves.
*Ginger – 3 big pieces.
*Green chilies – 3 nos.
*Sesame oil – as required.
*Chili powder – 3 tablespoons.
*Turmeric powder – 1/4 teaspoon.
*Fenugreek powder – 1 teaspoon.
*Asafoetida – 1/2 teaspoon.
*Jaggery powder- 3/4 teaspoon.
1)Marinate bitter gourd with vinegar and salt and keep aside for 30 mins. ( help to reduce bitterness)
2)Finely chop garlic, ginger, green chilies.
3)After 30 mins squeeze out the juice, fry the bitter gourd in oil, and keep aside.
4) Heat oil in a wok, splutter mustard seeds. Add finely chopped garlic (2 cloves), ginger, green chilies, and curry leaves. Once sauteed add chili powder, Turmeric powder, and fenugreek powder.
5)In lukewarm water add the tamarind water, asafoetida, and jaggery powder and add it to the above mixture.
6) Mix in the fried bitter gourd and adjust the salt.
Pickle ready…Enjoy !
