Village Style Chicken Dum Biriyani Recipe – Chicken Biriyani


  • Chicken – 1 kg
  • Maida – 1 cup
  • Onion – 4 nos
  • Tomatoes – 2 nos
  • Green chilli – 3 nos
  • Garlic – 6 to 7 nos
  • Ginger – 1 medium
  • Fresh curd – ½ cup
  • Coriander leaf – one hand full
  • Lemon juice – ½ piece
  • Cashew nut – 250 grm
  • Raisins – 250 grm
  • Red chilli powder – 2 tbsp
  • Turmeric powder – 1 tbsp
  • Garam masala – 1 tbsp
  • Cardamom – 2 nos
  • Cloves – 3 nos
  • Cinnamon-1 nos
  • Ghee – 4 tbsp
  • Oil – 3 tbsp
  • Salt – to taste


  • Take a large bowl add cleaned chicken pieces ,salt ,red chilli powder,turmeric powder and lemon
    juice mix them well and marinated for one hour .
  • Then we have to crush green chilli ,garlic and ginger into fine paste and set aside.
  • Then we have to wash biriyani rice few times till the water runs clear .
  • Then soak for one hour , drain and set aside.
  • Heat oil in a pan add chopped onion and salt ,fry evenly until golden brown and set a side.
  • Again we have to use same pan to frying marinated chicken pieces ,fry it well and set aside.
  • Heat ghee in a heavy bottom pan add spices like cinnamon,cloves etc .
  • Addchopped onion , soaked biriyani rice ,water and salt mix ,cover and cook well.
  • Ones the rice is well cooked ,drain excess water and set aside.
  • Heat ghee in a pan add chopped onion crushed ginger ,garlic and green chilli paste mix them well.
  • Add chopped tomatoes ,garam masala ,turmeric powder ,coriander leaves and fresh curd mix them
  • Then we have to add fried chicken ,cover and cook them well.
  • Heat oil in another pan add chopped onions and fry evenly until golden brown,drain and set aside.
  • Again we have to fry cashew nut and raisins ,drain and set aside.
  • For dum making we have to use maida mix,take a bowl add maida and sufficient water mix them
    well and make apaste ,set aside.
  • In a heavy bottom pan ,apply ghee and add the fried chicken masala in the base of the pan .spread it
  • Then we have to add cooked basmati rice .
  • Sprinkle some coriander leaves,fried cashew nut and raisins .
  • Add some turmeric water mix on the top ,
  • Again we make another layer of fried chicken and basmati rice .
  • Then we have to sprinkle some cashew nut ,raisins ,fried onion and coriander leaves .
  • Then seal the lid of the biriyani pot with the maida mix .
  • Switch on the heat ,then cook for 10 or 12 minutes in medium heat .
  • Then remove from fire and set aside.
  • Remove the seal and open the lid ,serve it hot.
  • Enjoy the tasty chicken dum biriyani with pickle.
