Ingredients
- Basmati rice -1 kg
- Cashew nut – 250 grm
- Peanut -250 grm
- Mustard seed – 1 tsp
- Urud dal -1tsp
- Bengal gram- 1 tsp
- Curry leaves – 3 sprigs
- Green chilli – 2 nos
- Chopped onion – 4 or 5 nos
- Lemon – 1 nos
- Turmeric powder-1 tbsp
- Coriander leaves – one hand full
- Oil – 3 tbsp
- Salt – to taste
- Ghee- 4 tbsp
Method
- First we have to wash and clean basmati rice.
- Heat water in a heavy bottom pot and add washed basmati rice and cook well.
- Ones the rice is cook drain excess water and set a side.
- Heat ghee in a pan add cashewnut and saute and fry it well,set aside
- Again we have to use same pan for frying peanut ,then saute and fry it well,set aside.
- Heat oil in a pan add spluttered mustard seed ,urud dal and Bengal gram saute well
- Add curry leaves ,green chilli and chopped onion saute for 5 to 7 minutes.
- Then we have to take a bowl then cut the lemon and squeeze it well,set aside.
- Then we have to add the turmeric powder into the cooking pan and mix well.
- Now we have to add cooked rice and mix well.
- Add squeezed lemon juice,fried cashew, peanut and ghee.
- Finally we have to add coriander leaves and mix well.
- Remove from fire and set a side
- Serve and enjoy lemon rice recipe.
