Quick and tasty lunch lemon rice recipe

Ingredients

  • Basmati rice -1 kg
  • Cashew nut – 250 grm
  • Peanut -250 grm
  • Mustard seed – 1 tsp
  • Urud dal -1tsp
  • Bengal gram- 1 tsp
  • Curry leaves – 3 sprigs
  • Green chilli – 2 nos
  • Chopped onion – 4 or 5 nos
  • Lemon – 1 nos
  • Turmeric powder-1 tbsp
  • Coriander leaves – one hand full
  • Oil – 3 tbsp
  • Salt – to taste
  • Ghee- 4 tbsp

Method

  • First we have to wash and clean basmati rice.
  • Heat water in a heavy bottom pot and add washed basmati rice and cook well.
  • Ones the rice is cook drain excess water and set a side.
  • Heat ghee in a pan add cashewnut and saute and fry it well,set aside
  • Again we have to use same pan for frying peanut ,then saute and fry it well,set aside.
  • Heat oil in a pan add spluttered mustard seed ,urud dal and Bengal gram saute well
  • Add curry leaves ,green chilli and chopped onion saute for 5 to 7 minutes.
  • Then we have to take a bowl then cut the lemon and squeeze it well,set aside.
  • Then we have to add the turmeric powder into the cooking pan and mix well.
  • Now we have to add cooked rice and mix well.
  • Add squeezed lemon juice,fried cashew, peanut and ghee.
  • Finally we have to add coriander leaves and mix well.
  • Remove from fire and set a side
  • Serve and enjoy lemon rice recipe.
