*Mango – 1kg.
*Ginger – 2 big pieces.
*Garlic – 3 cloves.
*Chili powder – 6 teaspoons.
*Cumin powder – 1/2 teaspoon.
*Fenugreek powder – 1/2 teaspoon.
*Asafoetida – 3/4 teaspoon.
*Oil as required.
1)Cut mangoes vertically.
2)Marinate mango keep on the flame to cook.
3)Once cooked sundry the mangoes well.
4)Heat a wok with oil, splutter mustard. Add in asafoetida, finely chopped ginger, curry leaves.
5) Add in chili powder, fenugreek powder, cumin powder. Once raw smell settled add water and salt.
6)Wash the sun-dried mangoes and cut it into small pieces. Add the mango to the pickle mix and saute well so the mango gets coated well.
Tasty mango pickle is ready…
